They have a very good reason for doing so. They want to make sure they treat all if the infected area. They need to make sure it is all c leaned well too. While you can easily see the visible affects area that doesn't mean that is the limit of the infection.
If you spill a drop of water on you carpet. You can see the surfaces that us wet. However, more than that surface has been affected. The water spreads further underneath the surfaces. The dime size puddle you can see is probably larger than a fifty cent piece. It has spread ed to the padding and the hardwood underneath.
The same principle applies to a wound and especially infections.
